As children, we'd visit our grandparents in Mexico City, and eat at Loma Linda (http://lomalinda.com.mx/) where we'd have this fantastic beef. Chimichurri is a green sauce that goes with any meat.

Ingredients

  • Beef
  • 1.5 lbs beef tenderloin, cut into 1 inch pieces
  • 1/2 cup white vinegar
  • 1/4 cup veg oil
  • 1 chopped onion
  • 1 bunch cilantro
  • 2 tbsp chopped garlic
  • 2 tsp thyme
  • 1 tsp oregano
  • 1 tsp cumin
  • Chimichurri Sauce
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup chopped onion
  • 2 tbsp minced red bell pepper
  • 2 tsp oregano
  • 1 tsp minced garlic
  • 2 tbsp parsley
  • 1/4 tsp red pepper flakes
  • 3/4 tsp salt
  • 1/2 tsp pepper

How To...


Stir all beef ingredients together, marinade for 4 hours in the fridge

Mix all chimichurri ingredients, let stand 2 hours

Wipe excess marinade off of beef, grill over hot charcoal

Serve with Chimichurri sauce, winning friends and influencing people.
