Homemade and healthy, these nachos have just enough flavor to satisfy your cravings, but like homesicktexan.blogspot.com said, "with just enough toppings to give it flavor and a bit of heft but not enough to make it saggy or soggy.".
Tortilla Prep
Heat oven to 400 degrees
Slice the tortillas into sixth’s (see picture)
Shred chicken by either pulling pieces off, or lightly pressing down with the knife with the grain
Spray cookie sheet with nonstick spray
Place tortilla slices as pictured
Cook for 10 minutes, turn each piece over after 5 minutes
Remove from oven. (If you use flour tortillas, it will cook faster)
Nachos
Place chicken on tortilla
Top with cheese, then top with jalepeno slice (optional)
Place back into oven, cook until cheese is melted (3 minutes)
Variations include pico de gallo, and just cheese.
