A nice crunchy fancy version of scalloped potato.
Make sure to wash the potato and skin it. Then cut the potato into circles using either a knife or a mandolin. Take the potato and place in bowl and put in the olive oil and salt and pepper. Make sure to mix to coat. Then stack the potato pieces on top of each other, (Get a better effect if they hang over the sides.) Then back in the oven at 375 degrees for about 35 – 40 minutes or until tender.
