Mmmm Mmmm Good

Ingredients

  • 8 skinless, boneless, chicken breasts
  • 2 medium onions, chopped
  • 2 garlic cloves, minced
  • 1 T. canola oil
  • 2 (14 oz.) cans chicken broth
  • 4 (15.5 oz.) cans cannellini beans, rinsed and drained
  • 1 (15.5 oz.) can cannellini beans, rinsed, drained and mashed
  • 2 (4.5 oz.) cans shopped green chilies, undrained
  • 1 t. salt
  • 1 t. ground cumin
  • 3/4 t. dried oregano
  • 1/2 t. chili powdcer
  • 1/2 t. ground black pepper
  • 1/4 t. ground red pepper

How To...


Cut chicken into bite size pieces. Saute chicken, onions and garlic in hot oil in a Dutch oven over medium high heat or until chicken is done. Stir in remaining ingredients; bring to a boil. Reduce heat, and simmer, uncovered, 30 minutes.
