6 Bean 5 Alarm Chili

Fast & easy chili. Very satisfying. Great for lunch or light dinner!

Ingredients

  • 1 lb ground meat
  • 1 can mixed beans
  • 1 can chili seasoned diced tomatoes
  • 2 tbsp extra light olive oil
  • 2 tbsp cocoa powder
  • 1 tbsp chili powder
  • 1 tsp cumin
  • roasted garlic powder, sea salt & mixed pepper to taste
  • chili pepper, Chinese, Thai or your preferred
  • water

Method


Heat oil in heavy pan on medium heat. Brown meat and add spices. Add cans of tomatoes and beans. I don't drain the beans...if you prefer to, you may need to add extra water or broth. Simmer 1 hour. Chili is edible as soon as heated through but the flavours get better with time.

This is super easy and can be modified to suit. I like to use ground pork and/or chicken or turkey but I have done it with lamb, moose, and venison as well.

You can also use any combination of beans. I like the 6 bean blend because you get a nice mix of textures. The kidney beans soften up nicely while the chick peas give it a little "tooth".

What else? Don't expect low cal, low carb , low fat, low sodium or low anything. I'd rather eat a smaller serving of "full whatever" than sacrifice taste. I love old fashioned from scratch recipes but I like modern techniques and tricks too.
