Barley Hot Dish

Ingredients

  • 1 lb Sausage
  • 1 lb Hamburger
  • 1 large onion, chopped
  • 2 c. diced celery
  • ¾ c. Barley
  • 1 can Cream of Mushroom Soup
  • 1 can Tomato Soup
  • 1 large can diced tomatoes
  • 1 can Corn, drained
  • 1 can Peas with liquid
  • 1 c. chopped fresh Carrots
  • 1 can Mushrooms, sliced or chopped
  • 2 Tbls Sugar
  • 2 tsp each of Salt & Pepper

Method


Preheat oven to 350°.

Brown the meats, drain off grease. Add Onion and Celery. Cook until Onions are clear. Add remaining ingredients. Bake at 350 ° for 2 hours. Cover for the 1st hour, then stir and cook for another hour.

[Note: this makes a large quantity, I use the “Turkey” Roaster pan!]

This recipe is easy to modify!
