Citris Roast Chicken

Make a very large chicken and use the leftover meat for meals later in the week.

Ingredients

  • 1 whole chicken
  • 2 lemons - washed and quartered
  • 2 whole oranges - washed and quartered
  • 6 cloves garlic - peeled
  • olive oil
  • salt and pepper
  • 5 slices turkey (or pork) bacon
  • 6 large carrot sticks - peeled
  • 6 stalks of celary
  • 6 whole potatoes (or more/less depending on pan size)
  • 1/2 onion - cut into large chunks

Method


Preheat oven according to directions on chicken package. Remove any "pieces" from chicken cavity. Rinse inside and out and pat dry with paper towel. Fill cavity with oranges, lemons, and garlic (depending on size of bird, all may not fit; if you have extra, place them in pan outside of chicken). Place carrots and celery in bottom of large roasting pan to act as a rack (if your pan does not have a rack). Season with salt and pepper and cover with oil. Place stuffed chicken on top - breast side up. Season chicken with salt and pepper and cover with bacon slices. Top with more salt and pepper and olive oil. Place remaining vegetables and potatoes around chicken and season with oil and salt and pepper. Cover pan with lid or foil. Bake according to package instructions. The bacon may be discarded, but it's very tasty eaten with the chicken. The leftovers work very well for enchiladas and casseroles, etc.
