Easy Chicken Enchiladas

Very, very easy chicken enchilada recipe. So easy, I feel like I am cheating, even though I have never made enchiladas any other way!

Ingredients

  • 2 C chopped cooked chicken
  • 2 C shredded Monterey Jack cheese with peppers
  • 1/2 C sour cream
  • 4.5 oz. can chopped green chiles, drained
  • 1/3 C fresh cilantro
  • 8 8" flour tortillas
  • 1 (8oz) container sour cream
  • 1 (8oz) bottle green taco sauce OR green enchilada sauce

Method


<p>Stir together first 5 ingredients. Spoon chicken mixture evenly over each tortilla and roll up. Arrange in a lightly greased 13x9 baking dish. Coat tortillas with vegetable spray.</p> <p>Bake at 350 for 35-40 min.</p> <p>Stir together sour cream and taco sauce. Spoon over hot enchiladas.</p>
