Easy Stuffed Green Peppers

Simple

Ingredients

  • 4-6 green peppers
  • 1 lb ground beef (browned)
  • 2 cups Minute Rice
  • 1 large can of V8 Juice
  • 1 bag frozen mixed vegetables

Method


Cut the tops off of 4-6 green peppers. Rinse the peppers and remove the seeds. Mix the ground beef and uncooked Minute Rice and mixed veggies in a bowl (add salt and pepper or other spices if desired.)

In a large pot, line the bottom with your peppers. Fill each pepper with the meat/rice/veggie mixture.

Add the V8 juice to the pot until it just covers your peppers. Any additional meat/rice/veggie mixture can be added to the pot now in little meatball form. This will thicken up the V8.

Cover the pot and cook on medium heat for approximately 30-35 minutes.

I didn't have potatoes so I substituted rice I didn't have paprika so I used another spice I didn't have tomato sauce so I used tomato paste A whole can-not a half can-I don't believe in waste. A friend gave me the recipe She said you couldn't beat it There must be something wrong with her I couldn't even eat it!
