Easy Taco Soup recipe that can be made super healthy


  • 1 ½ pounds ground beef, lean
  • 1 large onion, chopped
  • 1 28-oz can tomatoes with juice, chopped up (for extra spicy, use Rotel)
  • 15 oz. can pinto beans/Ranch Style beans, etc
  • 17 oz. can whole kernel corn, with juice
  • 8 oz. can tomato sauce
  • 1 package taco seasoning mix
  • 4 cups water


<p>In a dutch oven or big heavy pan, brown the beef and onion. Drain the fat and add all the remaining ingredients. Simmer for 1 hour. Serve with tortilla chips or Fritos and top with grated cheddar cheese.</p> <p>I have also tried this adding cilantro and fresh garlic.</p> <p>To make even healthier, you can use ground turkey, no salt added tomato sauce, and low sodium taco seasoning.</p>
