Edamame Hummus

Edamame replaces chick peas in hummus. This decreases the number of calories per serving and increases the %DV of many nutrients, vitamins, and minerals.

Ingredients

  • 16 oz edamame
  • ½ cup tahini
  • 6 tablespoons lemon juice
  • 1 teaspoon cumin
  • ½ cup water
  • 3 teaspoons minced garlic
  • Salt
  • Pepper

Method


  1. Heat frozen edamame according to the directions on the package.
  2. Add all ingredients together in a blender.
  3. Blend mixture until a thick, smooth paste is created. (Add one tablespoon of water at a time if the hummus becomes too thick to blend.)
  4. Add salt and pepper to taste.
