Baked version of the mexican fried dish

Ingredients

  • 2 cups shredded chicken
  • 1 clove garlic, minced
  • 1/2 chopped onion
  • cooking oil
  • 1 cup black beans, rinsed
  • 1/2 cup salsa
  • 1/2 cup shredded cheese
  • 2 tablespoons fresh chopped cilantro
  • 6 - 10 inch tortillas

Method


Preheat oven to 350, wrap tortillas in foil and warm in over for ten minutes. Sautee onion and garlic in hot oil until tender. Add chicken, beans, salsa, cheese, and cilantro. Heat over medium heat until cheese is melted add ingredients are all well mixed.

Scoop 1/2 cup of mixture onto one end of the tortilla (don't get too close to the sides) and roll tightly. Place tortilla seam side down on a baking sheet. Repeat with the remaining tortillas. Brush tortillas with oil. Bake in 350 over for 30 min. or until golden brown (Flip flautas over after 15 minutes or so). Remove and let cool for a few minutes before serving.
