Authentic Gazpacho Andaluz

Ingredients

  • 5 cups cold water
  • 5 large tomatoes - peeled, seeded and chopped (seasonal)
  • 1/4 cup minced onion
  • 1 clove garlic, minced
  • 1 cucumber, peeled and finely chopped
  • 1 green bell pepper, minced
  • 1/4 loaf stale or toasted French bread, cut into inch cubes
  • 1/4 cup olive oil
  • 1/4 cup wine vinegar
  • 1/8 tablespoon salt

Method


Combine it all and chill.
Water and bread are to thicken and thin so it's a judgement call.
Only use hothouse or best seasonal tomatoes.
