You can make this recipe as easy or fancy as you like. It's also versatile because each person gets an individual pizza. A great way to avoid turning on the oven on warm summer nights.

Ingredients

  • 1 roll refrigerator pizza crust (rec Pillsbury thin pizza crust)
  • olive oil
  • pizza sauce (rec Muir Glen)
  • pepperoni
  • 1/2 c thinly sliced onions
  • 1/2 c thinly sliced green pepper
  • 1 clove garlic - crushed
  • salt and pepper
  • shredded mozzerella cheese

Method

Preheat grill to medium. Roll out dough and cut into 4 equal pieces. Brush each side with olive oil. Place dough on grill for about 5 minutes on first side (you want to see dark grill marks), flip, and grill about 5 minutes on the opposite side. While dough is cooking, add onions, peppers, garlic, salt and pepper to saute pan coated with oil. Cook until soft. Add sauce, pepperoni, vegetables, and cheese to crusts. Return to grill and close cover for a minute or two to melt cheese.
