Healthy and tasty way to enjoy Salmon. Makes 4 Servings
1.Preheat outside grill on medium 2. Prepare Quinoa as label directs 3. In Medium bowl, combine peaches, onions, mint, vinegar,1/8 teaspoon cayenne and 1/8 teaspoon salt. 4. Season salmon with remaining 1/8 tsp of salt and cayenne. Place on grill skins side down. Cover and cook for 5 minutes. Carefully turn and cook for another 5 minutes or until cooked. Transfer to cool plate. Remove skin. 5. Stir snap peas into quinoa. Cover and cook for 2 more minutes. 6. Distribute peas and quinoa among 4 plates and then add salmon filets. Top with peach mixture.
