Easy way to get in a few fruits and veggies into dinner!

Ingredients

  • 1 pound pork tenderloin
  • 1 cup cooked rice
  • 1/4 cup chopped onion
  • 1/2 cup greeh pepper
  • 1 T Worcestershire sauce
  • 2 1/2 T apple cider vinegar
  • 8 ounce can tomato sauce
  • 1/2 cup pineapple tibbits w/ juice
  • 2 T Splenda
  • 1/4 t dry mustard

Method


Preheat oven to 350

Place pork in a baking dish, season with salt and pepper. Bake for 30 minutes. Combine all other ingredients in a mixing bowl and let sit while pork is baking.

After the 30 minutes, pour mix over the pork and bake for an addtional 30 minutes. Remove from oven and let sit for 5 minutes. Slice into 1/2 inch slices and serve over rice, spooning mix over the meat and rice.
