These pancakes are a healthy version of the blueberry pancake. Applesauce is a great substitution for fats and it can also act as a natural sweetener. While they aren't as sweet as traditional pancakes, the natural sugar definitely makes up for it.

Ingredients

  • • 1 3/4 cups all-purpose flour
  • • ¼ cup + 2 tablespoons applesauce
  • • 1 teaspoon baking powder
  • • 1/2 teaspoon baking soda
  • • 1/2 teaspoon salt
  • • 2 large eggs
  • • 1 cup milk, plus more if needed
  • • 1 cup Greek nonfat yogurt
  • • 1/2 teaspoon vanilla extract
  • • 1 1/2 cups fresh or frozen blueberries

Method


Combine the flour, baking powder, baking soda, and salt. In another bowl whisk the eggs and then add the milk, applesauce, Greek yogurt, and vanilla. Add the wet ingredients to the dry ingredients and mix until blended. Cook the pancakes on a skillet as usual.
