Fat Tuesday 2017 is here! Instead of indulging in fatty foods, why not have some healthy pancakes to mark the Fat Tuesday tradition this year? Here are five delicious and healthy pancake recipes to try.

Ingredients

  • 1 ¼ cups all-purpose flour
  • ¼ cup chopped walnuts, toasted
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¹⁄8 teaspoon freshly ground nutmeg
  • Dash of ground cloves
  • Dash of ground ginger
  • ¼ cup brown sugar
  • ¾ cup low-fat buttermilk
  • 1 tablespoon canola oil
  • 1 ½ teaspoons vanilla extract
  • 2 large eggs, lightly beaten
  • 2 cups finely grated carrot (about 1 pound)
  • Cooking spray
  • 3 tablespoons butter, softened
  • 2 tablespoons honey

Method


<p>In a big bowl, mix flour with walnuts, baking powder, cinnamon, nutmeg, cloves, and ginger. Add a pinch of salt.</p> <p>In another bowl, mix brown sugar with buttermilk, canola oil, vanilla extract, and eggs. Whisk the mixture well.</p> <p>Now, fuse sugar mixture with flour mixture and stir until moist. Fold in 2 cups of carrots.</p> <p>Place a non-stick pan on medium heat and grease it with cooking spray. Pour four mounds of batter onto the pan and spread it with spatula. Cook for 2 minutes on each side.</p> <p>Remove from the pan and serve with butter and honey.</p>
