Great soup....a little on the spicy side

Ingredients

  • 1 tablespoon olive oil
  • 2 cups chopped onion
  • 2 cups sliced celery
  • 8 ounces of cooked , shredded chicken
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon black pepper
  • 3 - 13 3/4 ounce cans of chicken broth
  • 2 tablespoons soy sauce

Method


In a large saucepan sautee onions and celery in olive oil for about 5 minutes. Add chicken and spices, stirring for about 1 minute. Stir in chicken broth and soy sauce. Bring to a boil, then reduce heat and simmer about 10 minutes.
