Easy, Healthy, and Yummy!
Cut meat into bite sized pieces and cook over medium heat. When cooked through add celery, peppers, and onion and cook until tender. Add thyme, salt, pepper, garlic, and cayenne pepper and stir in throughly. Finally add rice, tomatoes, and chicken broth. Simmer for about an hour or until rice is tender and the liquid has been absorbed. Let sit for 5-10 minutes before serving.
