Use fresh corn instead of frozen to make it delish. Amazing flavors make the refreshing!

Ingredients

  • 1 pkg frozen sweet corn OR 3 corn cobbs with corn shaved off
  • 1 medium red pepper, chopped
  • 2 cloves garlic, crushed
  • 3 T cider vinegar
  • 1/2 tsp each salt and pepper
  • 2 cans (2 1/4 oz each) sliced black olives
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp oregano
  • 1/8 c onion or so
  • 4 medium ripe avocados

Method


In a large bowl combine corn, olives, pepper, and onion. In a small bowl, mix garlic, oregano, oil, lemon juice, vinegar, and salt and pepper. Pour over corn mixture and toss to coat. Cover and refrigerate. just before serving, chop and add avocado. Serve with a sturdy tortilla chip.
