Low Fat Ice Cream

This recipe is an attempt to make a low fat ice cream by replacing the high-fat contents within the mixture.

Ingredients

  • 1 cup sugar
  • 1 cup 2% milk
  • 2 eggs
  • 2 cups evaporated milk
  • 1 1/2 teaspoons vanilla extract

Method


  1. Mix together sugar, milk and eggs in a saucepan.
  2. Heat the saucepan on low-medium heat
  3. Stir constantly for 20-30 minutes until the mixture becomes thick
  4. Pour the evaporated milk into a bowl
  5. Mix the vanilla into the evaporated milk
  6. Pour the mix from the pan into the bowl
  7. Stir thoroughly together. Mixing is key here to keep the crystal size down.
  8. Let sit in the refrigerator overnight
  9. Pour chilled mixture into an ice cream maker and crank according to the ice cream maker instructions. Or, pour mixture into a bag and submerge the bag in a bowl filled with a salted ice water solution. The salt will decrease the temperature of the solution to below freezing and allow the ice cream to freeze. Stir the ice water with the submerged bag of ice cream until the ice cream feels like regular ice cream.
