Caribbean style glazed chicken with diced mangoes
Dice mango
Smash peppercorns
Slice pepper into small slices 1/8 inch thick
Marinade chicken in diced mango, wine, pepper and spices for at least two hours
Place chicken in hot pan with olive oil.
Brown both sides
Remove chicken from pan and butterfly
Replace chicken in pan, inside down
Pour marinade mixture over chicken
Toss in pan until chicken is brown on underside (about 3 minutes) and marinade ingredients form a glaze
