Mexican version of classic chili

Ingredients

  • 1/2 onion
  • 1 green pepper
  • 1 can chicken broth
  • 2 (8 ounce) cans tomato sauce
  • 1 can diced tomatoes
  • 1 can whole kernel corn
  • 1 can kidney beans, drained
  • 1 can black beans, drained
  • 2 packages taco seasoning
  • 1 pound ground turkey (or beef)

Method


Chop onion and peppers and put into pot. Saute with a little bit of the chicken broth until softened. Brown ground turkey add 1 packet of taco seasoning to meat. Add the remaining chicken broth, tomato sauce, tomatoes, corn, beans and turkey to pot. Stir in the second package of taco seasoning. Bring to boil and then simmer for about an hour.

Serve topped with sour cream and shredded cheese if desired
