Oatmeal Peanut Butter Cookies. Great with ice cold milk. They tend to come out a bit dry, which is what the vegetable oil is there to prevent - use your judgment if you think you need more.
Cream together the butter, peanut butter, white and brown sugar, and vanilla. Add the egg and vegetable oil, beat. Add in the flour, baking soda, baking powder, and salt. Beat well until incorporated. Fold in oatmeal.
Round teaspoon sized chunks into balls, drop onto a greased baking sheet, and flatten to about 1/4 inch thick and round the edges with your fingers. Bake at 350 degrees for 10-14 minutes.
Test cookies before removing from oven. A light touch on the top - if they give too much and you feel air pockets, they need a couple more minutes. Should be a light golden brown.
