Deliciously messy! Fantastically easy!!
Thinly slice onion, placing about half in the bottom of crock pot. Lay pork over onions and cover with the remaining onions. Pour water in. Cook on high for 2 hours.
Remove pork and slice into one inch pieces. Drain most of the water from the crock pot, leaving about a half cup and the onions. Add pork and BBQ sauce back into crock pot. Cook on low for at least two more hours. (I left in for about four hours and just added more BBQ sauce after a few hours).
Shred the pork in the crock pot, it will be very tender and shred easily. Serve on buns.
