Pumpkin Bar Cake

This cake is a easier version of making pumpkin rolls...


  • 3 eggs,1 2/3 cups of granulated sugar,1 cup veg. oil,15 oz can of pure pumpkin, 2 cups all purpose flour, 2 teaspoon baking powder, 2 tsp. ground cinnamon, 1 tsp salt,1 tsp baking soda
  • Icing: 8 oz cream cheese softened, 1/2 cup butter or margine softened, 2 cups confectioners sugar and1 tsp. vanilla extract.


<p>cake:preheat oven to 350 mix eggs, sugar, oil and pumpkin until fluffy then add flour, cinnamon, salt, baking soda, baking powder, and mix until smooth bake for 30 minutes</p> <p>Icing:Mix the melted cream cheese and butter until smoothe then add confectioners sugar and vanilla and mix until smoothe.</p>

I didn't have potatoes so I substituted rice I didn't have paprika so I used another spice I didn't have tomato sauce so I used tomato paste A whole can-not a half can-I don't believe in waste. A friend gave me the recipe She said you couldn't beat it There must be something wrong with her I couldn't even eat it!
