A healthier alternative to muffins made with sour cream, with the same rich texture!

Ingredients

  • 1/3 cup butter
  • 3/4 cup plain non-fat yoghurt
  • 2/3 cup brown sugar, packed
  • 1/4 cup honey
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Method


Preheat oven to 400°F. Grease or line 12 muffin cups.

Melt the butter and let it cool until it is lukewarm.

Combine the yoghurt, sugar, honey, egg and vanilla extract.

Combine the flour, baking soda and salt.

Fold in chocolate chips.

Pour batter into muffin cups.

Bake about 20 minutes, or until an inserted toothpick comes out clean.

Remove and cool on wire rack.

Comments: This recipe replaces the sour cream traditionally found in muffins with plain non-fat yoghurt. Sour cream is a dairy fat that softens the mixture, acts as a binding agent, adds moisture, and adds flavor to the muffin. Plain nonfat yoghurt reduces the fat content in the muffin by over 15%. Its consistency is similar to sour cream and it acts in a similar manner. The resulting muffins do not have any difference in taste, keeping the same rich texture a sour cream muffin has!
