A healthier alternative to muffins made with sour cream, with the same rich texture!

Ingredients

  • 1/3 cup butter
  • 3/4 cup plain non-fat yoghurt
  • 2/3 cup brown sugar, packed
  • 1/4 cup honey
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Method


<p>Preheat oven to 400°F. Grease or line 12 muffin cups.</p> <p>Melt the butter and let it cool until it is lukewarm.</p> <p>Combine the yoghurt, sugar, honey, egg and vanilla extract.</p> <p>Combine the flour, baking soda and salt.</p> <p>Fold in chocolate chips.</p> <p>Pour batter into muffin cups.</p> <p>Bake about 20 minutes, or until an inserted toothpick comes out clean.</p> <p>Remove and cool on wire rack.</p> <p>Comments: This recipe replaces the sour cream traditionally found in muffins with plain non-fat yoghurt. Sour cream is a dairy fat that softens the mixture, acts as a binding agent, adds moisture, and adds flavor to the muffin. Plain nonfat yoghurt reduces the fat content in the muffin by over 15%. Its consistency is similar to sour cream and it acts in a similar manner. The resulting muffins do not have any difference in taste, keeping the same rich texture a sour cream muffin has!</p>
