Pickles wrapped in bacon wrapped in steak

Ingredients

  • Rolls:
  • 1 Jar dill pickles
  • 4 thinly sliced braciole, bottom, or flank steak
  • 1 pkg bacon
  • Dumplings:
  • Flour, eggs, and salt
  • Sauce:
  • 1 jar Heinz Savory Beef gravy
  • 1 small can tomato paste
  • Lambrusco wine
  • Sage
  • Basil

Method


Cook bacon, preheat oven to 300
While bacon is cooking, salt and pepper steak
Set cooked bacon aside
Drain bacon grease from pan, brown steak (30-45 seconds per side)
Set steak aside
Deglaze pan with Lambrusco
While pan is deglazing, make rolls: roll two pickles in four strips of bacon, roll that with one steak
Place rolls in oven at 300
Bring a pot of water to a boil
Pour wine from deglazed pan into saucepan, add 1 tsp butter
Stir in butter, add jar of gravy and 1/2 can of tomato paste
Add wine and/or brown sugar to offset acidity of tomato paste and basil and sage to taste
Make dumplings (mix egg and flour till sticky)
Drop tsp of dumpling mix in boiling water, cook till they float
Don’t forget to stir and taste the sauce
When dumplings are finished, place in pan with rolls, pour the sauce all over everything
Cook for ten more minutes and serve with a cold dark beer
