Similar to gnocchi recipe. Can be spicy if you so choose.

Ingredients

  • 8 oz. asparagus
  • 2 tsp. olive oil
  • 3 garlic cloves - chopped
  • 1/8 tsp. red pepper flakes - more for spicier.
  • 1/4 c. hot water
  • 4 oz. uncooked fettuccine
  • 6 oz. or more salmon fillets
  • 1 tbsp. lemon juice

Method


Cook fettucine. Cut asparagus into small pieces. In pan, saute 1 tsp. olive oil, asparagus, red pepper flakes, and garlic (about 1 min.) Add water. Cover and cook about 2 mins. (until asparagus is tender). Turn heat to low. Place salmon In microwave safe dish and drizzle with lemon juice (I sprinkle with a cajun seasoning too). Microwave for 2 to 3 mins. Separate fillet into pieces when cooked. Combine all ingredients and rest of olive oil. Toss.
