Sounds old and boring, but is updated and actually really good.
Preheat oven to 400 degrees. Brown meat with onions, carrots, garlic, salt and pepper in very large skillet. Move to side of pan or remove. To same pan, add oil and butter. When butter is melted, whisk in flour. Keep whisking and cook for a few minutes. Add broth and keep whisking until sauce becomes thicker. Add meat mixture back and combine. Add peas. Simmer for a few more minutes and mixture is quite thick. Tranfer to baking dish. Add egg to mashed potatoes and spread on top of meat mixture. Bake at 400 for about 15 minutes.
