A nice homemade version of shrimp scampi.


  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds fresh shrimp; shelled and deveined without tails
  • 1/2 cup of olive oil
  • 4 cloves of garlic, minced
  • 1 shallot, chopped
  • 1/2 cup fresh parsley, minced or 8 tsp of dried.
  • 1/2 teaspoon of dried oregano, crushed or 1/2 tbsp of fresh minced
  • 2 tbsp white or red wine
  • 2 tbsp of brandy
  • lime juice
  • optional: shake and bake mix
  • optional: 1 diced roma tomato or canned
  • optional: sub shrimp with pressed tofu or tofu chicken tenders
  • optional: 4 mushrooms chopped/diced


<ol> <li>In a small bowl combine flour, salt pepper and cayenne. Mix. Dredge shrimp or tofu in mixture.</li> <li>In a large skillet saute dredged shrimp/tofu in olive oil for 5 minutes over high heat. Toss often to prevent burning. Transfer with a slotted spoon to a serving dish. Leave oil in pan.</li> <li>Saute garlic, shallot, parsley, oregano and optional mushrooms over medium heat for three mins. If using tomatoes add them to the pan after 1 min of cooking. Squirt with lime juice halfway through cooking. stir constantly.</li> <li>pre heat broiler to medium.</li> <li>pour wine and brandy into the skillet and ignite. when flames die down stir to loosen any browned bits. pour over shrimp mixture.</li> <li>toss mixture into the broiler for a few mins.</li> <li>serve over rice pilaf or angel hair pasta.</li> </ol> <p>optional: you can shake and bake the shrimp instead of frying. Bake the shrimp in a glass dish @ 375 degrees for 23 mins.</p>
