Vegetarian Sloppy Joes

Sloppy joes made with beans instead of beef.

Ingredients

  • 1 can kidney beans or an equivalent amount dried, cooked kidney beans (you could also use any other kind of bean that has the same-ish texture as kidney beans)
  • Butter or oil of your choice
  • Your favourite tomato/pasta sauce
  • Cumin, chili powder and cayenne (to taste)
  • salt and pepper

Method


Mash your beans up in a pot add butter or oil heat over medium flame add sauce add spices cook until some of the moisture has evaporated and you're left with a sloppy, chunky mess of deliciousness. serve on your favourite buns.

This recipe thickens up greatly when refrigerated overnight, thus that is how I prefer it :) It's totally delicious when just made, of course, just a lot more sloppy :P

you could also probably add some ketchup to this, but I never have.
