Great tasting, simple way to get your veggies in

Ingredients

  • One yellow summer squash
  • One zucchini
  • Half of a red onion
  • Half of a green, red, and yellow bell pepper
  • Parmesean Cheese
  • Olive oil cooking spray
  • Salt and Pepper

Method


Cut up squash, zucchini, onion, and bell peppers and scatter over a cookie sheet.

Generously spray veggies with the olive oil cooking spray.

Salt and pepper veggies to your liking.

Bake in the oven at 350 degrees until tender.

Once tender, sprinkle with parmesean cheese and let cook for five more minutes to let cheese melt.
