A nice homemade version of shrimp scampi.

Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds fresh shrimp; shelled and deveined without tails
  • 1/2 cup of olive oil
  • 4 cloves of garlic, minced
  • 1 shallot, chopped
  • 1/2 cup fresh parsley, minced or 8 tsp of dried.
  • 1/2 teaspoon of dried oregano, crushed or 1/2 tbsp of fresh minced
  • 2 tbsp white or red wine
  • 2 tbsp of brandy
  • lime juice
  • optional: shake and bake mix
  • optional: 1 diced roma tomato or canned
  • optional: sub shrimp with pressed tofu or tofu chicken tenders
  • optional: 4 mushrooms chopped/diced

Method


  1. In a small bowl combine flour, salt pepper and cayenne. Mix. Dredge shrimp or tofu in mixture.
  2. In a large skillet saute dredged shrimp/tofu in olive oil for 5 minutes over high heat. Toss often to prevent burning. Transfer with a slotted spoon to a serving dish. Leave oil in pan.
  3. Saute garlic, shallot, parsley, oregano and optional mushrooms over medium heat for three mins. If using tomatoes add them to the pan after 1 min of cooking. Squirt with lime juice halfway through cooking. stir constantly.
  4. pre heat broiler to medium.
  5. pour wine and brandy into the skillet and ignite. when flames die down stir to loosen any browned bits. pour over shrimp mixture.
  6. toss mixture into the broiler for a few mins.
  7. serve over rice pilaf or angel hair pasta.

optional: you can shake and bake the shrimp instead of frying. Bake the shrimp in a glass dish @ 375 degrees for 23 mins.
