This recipe substitutes black bean puree for flour in a traditional brownie recipe cup for cup. Black beans may not sound exactly like the type of thing you’d want in your dessert, but don’t knock it until you try it!
Ingredients
- 1/2 cup butter (room temperature)
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup granulated sugar
- 1/2 cup cocoa powder
- 1 can black beans (15 oz)
- 1 tsp vanilla extract
- 2 eggs
- 2 cup chocolate chunks
Method
<p>Making Black Bean Puree:</p>
<ol>
<li>Pour entire contents of can of black beans into a blender (do not drain).</li>
<li>Blend until it is a thick paste.</li>
<li>Measure out a ½ cup of paste to be added to brownies.</li>
</ol>
<p>Making Brownies:</p>
<ol>
<li>Preheat oven to 350°F.</li>
<li>Mix butter, sugar, and vanilla in a large mixing bowl.</li>
<li>Add eggs into the large bowl one at a time, mixing in between.</li>
<li>Stir in black bean puree into the large mixing bowl.</li>
<li>Mix cocoa powder and salt in a small mixing bowl. Gradually mix into the large mixing bowl.</li>
<li>Mix in the baking soda.</li>
<li>Mix in the chocolate chunks.</li>
<li>Scrape into a 8x8in pan (sprayed with cooking spray) and spread evenly.</li>
<li>Bake for about 30 minutes.</li>
