The absolute best cornbread ever; great for Thanksgiving, Christmas, and Wednesdays.
Melt 2 Tbsp. butter with oil in a large skillet over medium heat; add mushrooms, celery, and bell pepper, saute 9 minutes.
Crumble cornbread, white bread, and saltine crackers into large mixing bowl. Stir in mushroom mixture, eggs, herbs/salt/pepper and chicken broth
Cover and bake at 350 degrees for 25 minutes until golden
