Beef and Beans on the bottom, cornbread on top -- @awo tasted and said, "I could eat this every week". Consider yourself warned!

Ingredients

  • 1 lb ground beef
  • 1 can Rotel (tomatoes and green chiles)
  • 1 can Pinto beans (or ranchero, maybe even black beans)
  • 1 box/bag of cornbread mix
  • 1 egg
  • 1 1/3 cups buttermilk
  • 4 tbsp melted butter
  • 4 oz grated cheddar or mexican cheese

Method


<p>Preheat oven to 400 degrees Brown the beef over medium high heat, breaking up any large pieces, drain if needed. Add beans and rotel, simmer for 5-7 minutes Add beef/beans/rotel mixture to a 9x12 inch casserole dish Whisk egg and buttermilk in a large bowl, Fold cornbread mixture into egg/buttermilk, add butter and cheese. Mix until just combined. Top the beef mixture with cornbread, smooth out the cornbread. Bake 20 minutes until a knife goes cleanly through the cornbread and the beef is bubbling.</p>
