This "Spaghetti" is made entirely from squash. It is vegan and gluten free, additionally it is healthier if you are trying to reduce carb intake. It is also really delicious and tastes comparable to a normal spaghetti recipe.

Ingredients

  • "Noodles":
  • -Spaghetti Squash
  • Sauce:
  • -1 can chopped tomato
  • -1 clove garlic
  • -a few leaves of basil
  • -1 Tbsp lemon juice
  • -1 Tbsp olive oil

Method


Squash: Preheat oven to 375oF. Stab squash all over using a knife. Place in oven on a pan for 40 minutes. Turn the squash over and place in oven for another 40 minutes. Remove squash when it is tender when poked with a knife. After the squash is cool enough to be touched, cut it in half and remove the seeds. With a fork, rake the flesh of the squash and it will come away in strands (looks like noodles).

Sauce: Preheat olive oil in a sauce pan. Add garlic, heat for 1-2 minutes. Add remaining ingredients and cook until desired consistency (~20 min until most of the water has boiled off).

To serve: put squash noodles in a bowl, pour sauce over it. Serve hot.
