Artichoke Salad


(Public for All)

Strong salty flavors - goes well with a piece of crusty bread.


  • 1/2 c olive oil
  • 1/4 c white wine vinegar
  • 1 clove garlic- crushed
  • 1 c artichoke hearts in water - drained
  • 1/4 c roasted red peppers
  • 1 1/2 T red onion - minced
  • 1/2 c black olives - quartered
  • 1 1/2 T fresh basil - chopped
  • 1/4 asiago or parmesan cheese - grated
  • 1 head romaine lettuce - chopped


Whisk oil, vinegar, and garlic. Toss in the artichokes, peppers, onion, olives, and basil. Cover and marinate in fridge at least 2 hours. Serve over lettuce and top with cheese.
