Asian Chicken with Sesame Noodles

Something a little different


  • 1 T soy sauce
  • 1 T rice vinegar
  • 1 t peanut oil
  • juice from 1/2 lime
  • 1/2 t salt
  • 4 chicken breasts - cut into small slices
  • 1 green and 1 red, yellow, or orange bell pepper - thinly sliced
  • bunch green onions - cut into about 1 inch pieces
  • For pasta:
  • 8 oz spahgetti noodles - cooked
  • 1/2 c chicken broth/stock
  • 1/4 c creamy peanut butter
  • 2 T brown sugar
  • 2 T rice vinegar
  • 2 T fresh lime juice
  • 1 T soy sauce
  • 1 T fresh ginger - minced/grated
  • 1 T chili sauce
  • 1/4 c dry roasted peanuts - chopped (if desired)


Preheat large saute pan to med/high. Combine ingredients above chicken. Toss with chicken. Saute chicken for about 6 minutes per side or until cooked through. Add peppers and onions while cooking. For sauce, heat broth, peanut butter, 2T brown sugar, vinegar, lime juice, 1 T soy, ginger, and chili sauce in pan over med heat - whisking to combine. Simmer for a few minutes. Pour sauce over pasta and toss. Top with chicken and vegetables, and peanuts, if desired.
