Awesome party food and makes a huge amount!
Preheat oven to 425. Coat pototoes with oil, salt and pepper. Bake for about an hour or until fully-cooked. Cool. Cut into quarters. Scoop outinsides, leaving 1/2 inch shells. Brush with butter. Place cut sides up on large baking sheet. Bake 15 minutes. Cover with cheese and bacon and salt and pepper. Bake for a few minutes or until cheese melts. Serve with salsa, sour cream, and onions.
