Beans and Rice

Great side for any Mexican dish


  • 1/4 c onion - diced
  • 2 cloves garlic - crushed
  • 1 carrot - diced
  • 1/2 jalepeno - seeded and minced
  • about 2 c white or brown rice - prepared (I use Success Rice - boil in bag)
  • 1 can black beans - drained and rinsed
  • 1 1/4 c chicken broth/stock
  • juice from 1 lime


Saute onion, garlic, carrot, and jalepeno until soft. Add broth, black beans, and rice. Simmer for a few minutes. Squeeze lime juice over top.
