Beet Pasta Recipe

This is a fast pasta dish using beets. This is supposed to feed 4 main course or 6 appetizers.


  • * 1 tbspn butter
  • * 2 tblspn olive oil
  • * 2 minced garlic cloves
  • * 3 cups (packed) coarse grated peeled raw beets
  • * 1/2 tspn cayenne pepper
  • * tblspn lemon juice
  • * packet linguine, fettucine, tagliatelle..
  • * 8 oz sour cream (we use low-fat)
  • * 6 tblspn chopped italian parsley


  1. . Melt butter with oil over medium heat in a non-stick skillet.
  2. . Add garlic and saute till pale golden.
  3. . Add beets and cayenne.
  4. . Mix together, cover, and then saute over medium-low heat for 12 mins.
  5. . Cook pasta while the beets are cooking.
  6. . Stir lemon juice in with beets
  7. . Drain pasta, add sour cream, parsley and beet mixture and stir together. (Or what I do since I'm the only beet fan is put the pasta in my pasta bowl, adding several spoons of beets, a dollop of sour cream and some parsley and mix it myself.
