These sweet and spicey pecans are great for a snack or in a green salad.
Mix 2 cups sugar and 2 cups water and a dash of cayene pepper in saucepan. Heat over med-hi until boiling, stirring often, for 5 minutes.
Add 2 cups chopped pecans or pecan halves. Cook for 5 minutes, then drain, Fill pan 1/2 full with oil; heat on med for 5 minutes, then add pecans. Cook, stirring often, for 5-10 minutes until a deep brown.
Drain pecans and place on cookie sheet covered with parchment paper.
Mix 1 teaspoon sugar, 1 teaspoon cinnamon, 1/2 teaspoon salt and 1/4 teaspoon cayenne pepper. Sprinkle ove pecans. Cool
I added honey roasted peanuts for a snack but these pecans are great in a green salad.
