Chicken Potato Casserole


(Public for All)

A hearty dish. Serve with a green salad and you have a complete meal.... The kids love it!


  • 2 Lbs Hash Browns, Frozen
  • 1 - 8 Ozs Canned Chicken ( I use 2 for more protein for the kids )
  • 1/2 cup Onion -- chopped
  • 1/2 cup Butter -- (1/4 cup reserved)
  • 1 Tsp salt
  • 10 Ozs Sharp Cheddar Cheese -- grated
  • 1 Tsp pepper
  • 10 Ozs Cream of Chicken Soup
  • 8 Ozs Sour Cream
  • Herb Seasoned Stuffing Mix ( I use Pepperidge Farms )


Thaw potatoes partially. Mix all ingredients except reserved butter and stuffing mix. Pour into a well greased casserole dish. Mix stuffing mix and butter together and sprinkle on top of casserole. Bake at 350 degrees for about an 1 hour and 10 minutes. Or until nice and bubbly. Makes a lot!
