A family recipe that I probably shouldn't be sharing... I'm also pretty sure my wife married me because of this recipe but can't be sure. This recipe is an excellent side to any dish with spice (most mexican and spanish dishes)

Ingredients

  • 1 cup long grain enriched rice
  • 1/4 cup broken pasta (spaghetti or angel hair pasta)
  • 2 cloves of garlic
  • 2 cup chicken stock
  • 2 tbsp of olive oil
  • 1 tbsp of butter
  • 1 bunch of fresh cilantro, chopped
  • 1/2 chopped onion

Method

  1. Chop up your garlic, cilantro and onion

  2. Wash your rice in a colander -- this is unique, and will wash out the starch from the rice

  3. Heat the oil and butter in a heavy bottom dish

  4. Saute the onion and garlic for 3 minutes

  5. Add the rice and pasta until brown

  6. Add cilantro and saute for another minute

  7. Add chicken stock, bring to a boil

  8. Reduce heat, cover and cook for 30 minutes
