Creamy Chicken and Pasta Bake

Creamy Chicken and Pasta Bake


  • 1 1/2 cups multi grain rotini pasta, uncooked
  • 3 cups broccoli, cut into florets
  • 1 lb boneless skinless chicken breasts, cut into 1 inch pieces
  • 1/2 cup low sodium chicken broth
  • 1/4 cup light cream cheese
  • 3/4 cup part skim mozzarella, shredded, divided
  • 2 tbsp light Parmesan grated cheese


1) Preheat Flavorwave oven to 400°F. Cook pasta in large saucepan as directed on package, adding broccoli for the last 3 minutes, 2) Meanwhile, heat large skillet on medium-high heat. Add chicken; cook 3 minutes or until no longer pink, stirring frequently. Stir in broth; simmer 3 minutes or until chicken is done. Add cream cheese; cook and stir on low heat I minute or until melted . Stir in IS cup mozzarella. 3) Drain pasta and broccoli. Add to chicken mixture; mix lightly. Spoon into a square baking dish. 4) Bake in the Flavorwave oven on the top rack for 15 minutes or until heated through. Sprinkle with remaining cheeses. Bake, uncovered, 3 minutes or until melted. Let stand 5 minutes before serving.
