Great with a ham dinner.

Ingredients

  • 1 package dry yeast
  • 1/4 c. warm water
  • 1 c. cottage cheese (heat just until room temperature)
  • 1 T butter
  • 2 T sugar
  • 1 t. salt
  • 1/4 t. baking soda
  • 1T instant minced onion
  • 2 t. dill seed (more can be added if you like)
  • 1 egg
  • 2 1/4 - 2 1/2 c. flour

Method

Soften yeast in water, let stand 10 minutes. Combine in a large bowl, cottage cheese, butter. Add mixture of sugar, salt and baking soda. Add onion, dill seed, egg and yeast. Use wooden spoon to beat until well blended. Add flour gradually and beat well. Cover and let rise until double in size, about 1 1/2 hour.

Beat down dough, turn into well greased 1 1/2 - 2 quart casserole. Let rise until double in size again. Bake in 350 degree oven for 35 - 45 minutes. If bread browns too quickly cover with foil and continue baking. Brush top with soft butter and sprinkle with salt. Cool 20 min, run knife around edge of bowl and remove. Place on wire rack to cool.
