Edamame replaces chick peas in hummus. This decreases the number of calories per serving and increases the %DV of many nutrients, vitamins, and minerals.
Ingredients
16 oz edamame
½ cup tahini
6 tablespoons lemon juice
1 teaspoon cumin
½ cup water
3 teaspoons minced garlic
Salt
Pepper
Method
Heat frozen edamame according to the directions on the package.
Add all ingredients together in a blender.
Blend mixture until a thick, smooth paste is created. (Add one tablespoon of water at a time if the hummus becomes too thick to blend.)
Add salt and pepper to taste.
